I am 38 years old and male, I recently started going the nofap route (early November, but relapsed about 2 weeks ago and jerked off twice since I didn't know all that I know now about dopamine and stuff) after I noticed that my health and mental health started going down the drain suddenly, I have now issues with insomnia at night (hard time falling asleep and wake up multiple times throughout the night, so I use herbal teas to try and fall asleep like Valerian root) and during the day I am so stressed and anxious about everything and I keep getting ups and downs throughout the days as if I was bipolar all of a sudden or something.

I used to fap all day, everyday for years (from late 2019 till late 2022, I used to fap before, but nothing like that), but most of the time I wouldn't ejaculate, I would just fap while holding it in all day long and everyday, I am guessing I messed my brain out eventually by pumping in it so many chemicals whitout any release and my nervous system just eventually burned out and crashed or something?

I also feel weird now all the time, like I was not myself anymore or if I was a little drunk constantly or something.

Anybody experience the same things? It's already been almost 1 month and 3 weeks since I started my nofap journey and I am still in a bad shape mentally speaking...

Something changes in the brain when you stop, I don't know exactly what is going on in there but once you trigger that change(let's just call it flatline) then at that point there's no going back. Relapsing won't do anything, actually, like you've experienced, it can actually make it progressively worse. The only way out is to abstain totally until you get there. I'm 120 days in but not there yet.
