Dude body fluids and sweat can leave stains, check the sheet fabric type as there are different methods to removing proteins stains depending on the material.
Gotta get to it early and do it right otherwise you may set the stain.
Regarding the smell, if it wasnt something you noticed that night its prolly nothing sweat and body fluids harbor bacteria and if left in a warm wet environment for a while it will smell.
Also, beware of the risk if your get into butt stuff, her accidentaly shitting the bed is akward for everyone so best to just never speak of it ever.

 

Similar thing happened first time my ex came over to my place. The "brown" on the sheets was dried blood, plus vaginal fluid. She was just having her period. In your case, it was probably either that, or maybe you scratched her while fingering her. Or even both of these plus an STI.
I believe the only way to find out is to play doctor. Be sure to trim your nails.

 

I've seen that once too though after intercourse. My lover had just finished up her period the day before. Basically it was period stuff. Remember, during menses ladies are not expelling blood but also tissue. The stuff can be all kind of shades of red and brown.
